Ingredients
- 2kg Omega Mussels (including the juice in the pouch) - 2 tablespoons olive oil - 1 large onion, diced - 2-3 cloves garlic, crushed
- 2-3 stalks celery, diced - 1 cup (250ml) dry white wine - 2 tablespoons finely chopped fresh parsley
Method
Heat the oil in a large pot (with a matching lid) and sauté the onion, until softened. And then stir in the garlic and celery. Next open the Omega Mussels and pour the mussels and the juice from the pouch straight into the pot. Give the pot a shake or stir through to combine. Pour over the wine and give the contents another stir.
Place the lid on for 2minutes just till the mussels heat through. Sprinkle with parsley and serve in sharing bowls!
